New to all this so not meant to be a daft question but if I were to invest in the S&P 500 or the FTSE 100 through Freetrade with a GIA and got paid the dividends say annually would I be able to withdraw the money from the dividends to a savings account whilst still retaining the investments or would it be automatically reinvested as per the OP’s question?

That depends on the ETF you are investing in. They are either accumulating or distributing. The former reinvests directly, the latter pays the dividend into your account and you can withdraw it.
It will tell you which of the two an ETF is in its description.
